Kaitia Fire Chilli Pepper Sauce chillies used are sun ripened in New Zealand's far north.  Kaitia Fire Chilli Pepper Sauce chillies are mashed, salted and barrel aged for a few years.  It is then blended with vinegar to give this sauce it's very distinctiveness sharpness of both flavour and heat.  The sharpness hits you instantly. The sour of the vinegar and the heat from the chilli reacts instantly in the mouth.  Use this on everything like pizza, fried chicken and kebabs but my all time favourite is for breakfast on a really big mushroom and tomato omelette with extra cheese.

INGREDIENTS: Chilies, Water, Cider Vinegar, Food Acid (260), Salt, Vegetable Gum (415).
